Food Storage/Couponing- Giving Back

     This morning I saw a post on Facebook. Someone is tight and need help with food. I have been there as a single mother (before my amazing hubby), there were day's I couldn't eat because if I did my little one wouldn't. Therefore when I hear that someone needs help, I try all I can do to help. 

My morning conversation 
      Luckily I have my food storage and can throw together a bag or two to help the person get to the next paycheck. By using my coupons, it doesn't kill me to help out. We aren't rich, we are the poor middle class doing what we have to get bye. It makes me happy that we have our food storage just to make one persons life better is a blessing.

Gardening and Cooking- harvesting and canning cucumbers (mmmm pickles)

I am canning my cucumber if I get enough. I want to get at least 3 cans of Sweet Pickles and 3 cans of dill pickles. I am looking up several times of types ways to can them. Here is what I have found on line. I have a few books at home too. I'm going to look in.

I love garlic so when I came a crossed Garlic Dill Pickles by Marisa  at Food in Jars. I had to save the recipe. I am putting this one aside to see if I want to try it. I will have many different types of recipes by the end and Hubby will pick out ones he likes the best.

While I checking the recipe on Food in Jars I came a crossed Urban Preserving: Refrigerator Dill Pickles. This looked awesome. I want to save this recipes and decided to share it with you. This would be an easy recipe for people starting to can.

This looks like a great recipes for Pop's Dill Pickles, these look perfect. The recipe came from allrecipes.com it got 4 1/2 stars.

Hope you like the recipes I have come up with. I will let you know how they turn out if Hubby decide we should try them. What is your favorite pickle recipe?

Gardening and Cooking- How to Save and Store Peas

I have been harvesting peas throughout the spring and early summer. I hope to have a hole garden box of peas this fall. So I started to think, how can I save the peas for dinner during the winter.

First thing I though of was canning. I don't know much about canning peas or anything that has to be presser cooked canning. That scares me a little... Here is an awesome site that has information on canning peas Pick Your Own.

Then I thought about freezing them! I love peas, and freeze them can't be that hard. According to Leda Meredith at About.com the best away to store them is to blanch them quickly and freeze them. I might do this way seems safer and easier.

Then started to thing about the soups in mason jars. Started to think, how easy is it to dry peas. Jenny Harrington from ehow home article "How To Make Dried Peas" says it is so easy. I think I this would be awesome, because I can us the bad canning jar and old lids to store them.

I'm not sure how I'm going to store them, I'm going to have to talk to Hubby and see what he thinks. Plus My Little One would have to stop eating them all. How are you saving you pea?
