Gardening and Cooking- harvesting and canning cucumbers (mmmm pickles)

I am canning my cucumber if I get enough. I want to get at least 3 cans of Sweet Pickles and 3 cans of dill pickles. I am looking up several times of types ways to can them. Here is what I have found on line. I have a few books at home too. I'm going to look in.

I love garlic so when I came a crossed Garlic Dill Pickles by Marisa  at Food in Jars. I had to save the recipe. I am putting this one aside to see if I want to try it. I will have many different types of recipes by the end and Hubby will pick out ones he likes the best.

While I checking the recipe on Food in Jars I came a crossed Urban Preserving: Refrigerator Dill Pickles. This looked awesome. I want to save this recipes and decided to share it with you. This would be an easy recipe for people starting to can.

I also came along this awesome recipe Craven County Sweet Pickles Recipe from What's Cooking America. It looks perfect for my sweet pickles.

This looks like a great recipes for Pop's Dill Pickles, these look perfect. The recipe came from allrecipes.com it got 4 1/2 stars.

Hope you like the recipes I have come up with. I will let you know how they turn out if Hubby decide we should try them. What is your favorite pickle recipe?

Gardening- How To Harvest Cucumbers


I am so excites that I harvest my cucumber right this morning. She says to harvest first thing in the morning. I did that because it is so hot you have no choice, here in pa. The temperature is feel like 100+.  

I also used shears to harvest instead of scissors. Though out the rest of the season I will be harvesting cucumber 3-4 times a week. This also helps me keep a good eye on the plant. Today I found out one of my vines is starting to grow under the deck. I will have to weave it through the lattice, so it gets off the ground and has the right amount of sun.

Today Harvest

I have already put wash in the washer, and some in the dryer. I went around the garden harvesting veggies. I get my first cucumber. I also feed the pets all before getting ready for work.

Today's Goals

1.     Gardening~ Figure out weekly goals and post them.

2.    Gardening ~ Research a good pickle recipe, I want to pickle a few jars of cucumber. Some sweet and some with a bit.

3.    Work~ I work 8am-6pm today.

4.    Movies~ I am taking the little one to see a movie today. This will be their first! I’m so excited for them!

5.    Cleaning ~ work on dishes and counter, have them cleaned before bed.

Yesterday’s Goals

1.     Cooking ~ Make menu for the week ~ I hope to post it today

2.    Library ~ Take Little one to library class. ~ We had a great class and my little one made a friend.

3.    Work ~ I work from 8-6 today. One of the little ones are sick today. Everyone was in a great mood.

4.    Gardening ~ Walk around and find stand water and dump it. If water needs to be there, add new clean water. ~ only one more bucket to go.

5.    Gardening~ Figure out weekly goals and post them. ~ I have to figure out my goals still.

I didn’t get them all done, but working on them. With the heat, it is hard to want to do anything!

Gardening Goals -peas

My pea box is out of control
I worked on two of My Weekly Gardening Goals - peas and carrots. The goal was to clean up the peas and start to plant so of my fall plants. 

I went though the box and started to pull everything out. I had yellow squash, radish, carrots, and peas in the box. I pulled out all the peas and plant kohlrabi and Swiss Chard in the box. After that I pull out a lot of the radish and planted mustard and beets in there planted them.  I did leave about 4 radish in the box to save the seeds. 

After that I pulled 1/2 my carrots. I left the other half grow so they get bigger. I did plant more carrots and corn salad in that area! 

Once my yellow squash are done growing I will pull them and plant my peas and radish.

Having plants grow in the box all season long help me provide food for my family and help put nutrients back into the soil.

Gardening Tip- Grow Your Own Medicine

Today I was looking around online about herbs to help you with colds. My house and the homes I work with all have summer colds. We are stuff and low fevers and sore throats.
