This recipe was adapted from one my boss uses, but I don't know where she got it from. It is one of hubby's favorites!

Everything But the Meat |
Here is what you need:
6 Tortillas
Enchilada sauce
1/4 cup Evaporated milk
4 oz of Cheesy melt cheese (like Velveeta)
1/2- 1 cup of Mozzarella cheese
4oz sour cream
Mrs. Dash to flavor the meat
1/2-1lb of beef

Meat in frying pan |
1. You start to cook the meat, I add a bit of EVOO, and season it with Mrs. Dash. Then cook it until its brown.

2. While you are browning the meat, you put the sour cream and the cheesy melt in the micowave, and cook the for 30 second at a time until they are melted. Mix in between the 30 seconds.

3. Divide the melted cheese mix, in half. Put one half aside.

4. Add the evaporated milk to one 1/2 of the melted cheese, and mix it together.

5. Speard out the torillas.
6. Add the brown beef to the cheese mixture (the one that didnt have the evaporated milk in it) and mix.

7. Evenly divided the meat mixture up, on to the 6 tortillas.

8. Spary the Cassarole dish, and roll up the tortillas and place them in the dish.

9. Add the milk and cheese mixture to the cassarole dish. Trying to cover all the tortillas.

Add the Enchilada sauce |
10. Add the Enchilada Sauce to the cassarole dish. Try getting what wasnt cover with the cheese mixture.

Add Mozzarella cheese |
11. Add enough Mozzarella cheese to cover the tortillas

Bake in oven |
12. Bake in the oven for 20-25 mins at 350.

13. It is ready to eat! Add some salad and you are ready to good!
